Quick turkey curry, or… Turkey Rolls with Thai Curry and Coconut Milk

 Ingredients

for 3 people

  • 450 g turkey breast, cut into medium cubes

  • 150 ml of coconut milk

  • 1 tablespoon Thai curry paste, preferably organic

  • 1 teaspoon grated ginger

  • 2 teaspoons of lime juice

  • Salt and pepper to season

  • A few coriander leaves to decorate

Method

Start by preparing the marinade:

  • Mix the coconut milk, curry paste, ginger and lime juice in a bowl.

  • Stir well to get homogeneous.

  • Season with a little salt and pepper – not too much as the paste already has quite a bit of flavor.

Then put the turkey meat in the marinade and wrap it well. You can do it in a larger bowl or in a freezer bag, the kind with a zipper.

Let it marinate for at least 15 minutes – for example, this is the time to prepare the side dish. But you can also leave it overnight in the fridge.

To cook the turkey:

Preheat the oven to 180º for 10 minutes.

Cut three pieces of kitchen aluminum foil, big enough to be able to fold and make a package with the meat inside.

Coconut Milk

Divide the turkey meat into three portions and place each portion on the respective sheet. Decorate with the coriander leaves and close the packets.

I usually center the food on the foil and fold it up, rolling the ends together – it's important to leave air inside the wrappers so that some steam is created during cooking. See below.

They don't look pretty but they work!

Put it in the oven for 20 minutes. When you take it out, let it rest for about 2 to 3 minutes before opening. When you open it, squeeze a few more drops of lime juice on top of each mound of turkey, to give an additional touch of freshness.

You have the option of serving the turkey inside the paper bags, especially if you're more good at the shape than I am 😉

Coconut Milk

The easiest way to make them is with the help of a contraption called a “spiralizer”.

With this crank model, making vegetable noodles takes just 5 minutes. And it doesn't cost too much. Mine cost £20 on Amazon UK about 2 years ago.

You can eat them raw, as I did in this case, or sauté them very lightly in a frying pan with a little olive oil or coconut oil.

Season with lime juice, salt and pepper.

Simpler is impossible!
