Here is a recipe for making black walnut ice cream:
Ingredients:
2 cups heavy cream
1 cup whole milk
3/4 cup granulated sugar
4 egg yolks
1 tsp vanilla extract
1 cup black walnuts, chopped
Instructions:
In a medium saucepan, heat the heavy cream, milk, and 1/2 cup of sugar over medium heat until the sugar is dissolved and the mixture is hot but not boiling.
In a separate bowl, whisk together the egg yolks and remaining 1/4 cup of sugar until pale yellow and thick.
Slowly pour the hot cream mixture into the egg yolk mixture, whisking constantly to prevent the eggs from cooking.
Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 5-7 minutes).
Remove the pan from the heat and stir in the vanilla extract.
Pour the mixture through a fine-mesh strainer into a clean bowl.
Cover the bowl with plastic wrap and refrigerate until completely chilled (at least 4 hours, or overnight).
Churn the ice cream in an ice cream maker according to the manufacturer's instructions.
In the last few minutes of churning, add the chopped black walnuts.
Transfer the ice cream to a freezer-safe container and freeze until firm (at least 4 hours, or overnight).
Serve and enjoy!
Tips for making the best black walnut ice cream:
Use fresh, high-quality ingredients for the best flavor.
Chop the black walnuts finely for a more even distribution throughout the ice cream.
If you don't have an ice cream maker, you can still make this recipe by pouring the chilled mixture into a shallow dish and freezing it for a few hours, stirring every 30 minutes or so to break up any ice crystals.
For an even richer flavor, you can substitute some of the milk with more heavy cream.
This ice cream pairs well with other flavors such as vanilla, chocolate or caramel.
