chicken congee recipe

 Chicken congee, also known as rice porridge, is a comforting and delicious dish that is popular in many Asian countries. Here is a simple recipe to make chicken congee at home:

Ingredients:

  • 1 cup of rice

  • 4-5 cups of water or chicken broth

  • 1 chicken breast, cut into small pieces

  • 1-inch piece of ginger, peeled and minced

  • 2 cloves of garlic, minced

  • 1 tablespoon of soy sauce

  • Salt and pepper to taste

  • Green onions, sliced (optional)

  • Fried garlic (optional)

  • Sesame oil (optional)

  1. Rinse the rice in a colander until the water runs clear.

  2. In a large pot, add the rice and water or chicken broth. Bring it to a boil over high heat, then reduce the heat to low and simmer for about 30 minutes, or until the rice is cooked and has a porridge-like consistency. Stir occasionally to prevent the rice from sticking to the bottom of the pot.

  3. In a separate pan, heat a tablespoon of oil over medium-high heat. Add the minced garlic and ginger and sauté until fragrant, about 1 minute.

  4. Add the chicken to the pan and cook until it turns white.

  5. Add the soy sauce and stir well.

  6. Add the chicken and its sauce to the pot of congee and stir well.

  7. Season with salt and pepper to taste.

  8. Simmer for another 5-10 minutes, or until the chicken is cooked through and the congee is thick and creamy.

  9. Serve the congee hot, garnished with sliced green onions, fried garlic, and a drizzle of sesame oil, if desired.
