chicken pupusas

 Chicken pupusas are a popular Salvadoran dish made with a corn masa dough and a flavorful chicken filling. Here's a recipe for making chicken pupusas:

Ingredients:

For the masa dough:

  • 2 cups masa harina (corn flour)

  • 1 1/2 cups warm water

  • 1/4 teaspoon salt

For the chicken filling:

  • 2 cups cooked and shredded chicken

  • 1/2 onion, finely chopped

  • 1 garlic clove, minced

  • 1/2 teaspoon cumin powder

  • 1/2 teaspoon oregano

  • 1/2 teaspoon chili powder

  • Salt and pepper to taste

  • 1/2 cup chicken broth

  • Oil for cooking

Instructions:

  1. In a mixing bowl, combine the masa harina, warm water, and salt. Mix well until a smooth dough forms. Cover and let the dough rest for about 10 minutes.

  2. In a skillet, heat oil over medium heat. Add the onion and garlic and sauté until soft and fragrant.

  3. Add the shredded chicken, cumin powder, oregano, chili powder, salt, and pepper to the skillet. Stir well to combine and cook for about 2-3 minutes.

  4. Add the chicken broth to the skillet and cook for another 5-7 minutes, or until the liquid is absorbed and the chicken filling is moist but not too wet. Remove from heat and let it cool slightly.

  5. Divide the masa dough into small balls, about 2-3 inches in diameter.

  6. Flatten each ball with your hands to create a small disc. Add a spoonful of the chicken filling in the center of the disc.

  7. Fold the edges of the dough over the filling and pinch the edges to seal, forming a small stuffed ball.

  8. Gently flatten the ball with your hands to create a thick pancake-shaped disc, about 1/2 inch thick.

  9. Heat a non-stick skillet or griddle over medium-high heat. Add a little bit of oil to the skillet.

  10. Place the pupusas in the skillet and cook for about 2-3 minutes on each side, or until lightly browned and cooked through.

  11. Serve the hot and delicious chicken pupusas with curtido (a Salvadoran cabbage slaw) and salsa.
