Lemon Ups are a type of cookie that are soft, chewy, and packed with lemon flavor. Here's a recipe to make them:
ingredients:
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
2 large eggs
2 tbsp lemon zest (approx. 2-3 lemons)
2 tablespoons fresh lemon juice
1/2 teaspoon vanilla extract
1/2 cup powdered sugar for topping
Instructions:
Preheat Heat
to 350°F and line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
In a large bowl, using an electric mixer, beat the butter and caster sugar until light and fluffy, about 2 to 3 minutes.
Add the eggs one at a time, beating well after each addition
lemon zest, lemon juice and vanilla extract. Add to
flour mixture and mix only briefly. Location
powdered sugar in a shallow bowl. Roll the dough into 1-inch balls, then roll each ball in powdered sugar until coated.Place
balls about 5cm apart on the prepared baking sheet. Bake
for 12 to 15 minutes or until edges are lightly browned.
Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
