Chicken chermoula is a flavorful Moroccan dish made with a mixture of herbs and spices. Here's a simple recipe to make chicken chermoula:
Ingredients:
- 4 boneless, skinless chicken breasts 
- 2 tablespoons of olive oil 
- 1 lemon, juiced 
- Salt and pepper to taste 
For the chermoula sauce:
- 1/2 cup of chopped fresh cilantro 
- 1/2 cup of chopped fresh parsley 
- 1/4 cup of chopped fresh mint 
- 2 garlic cloves, minced 
- 1 tablespoon of smoked paprika 
- 1 teaspoon of ground cumin 
- 1 teaspoon of ground coriander 
- 1/4 teaspoon of cayenne pepper 
- 1/4 cup of olive oil 
- Salt and pepper to taste 
Instructions:
- Preheat the oven to 375°F (190°C). 
- Season the chicken breasts with salt and pepper to taste, and place them in a baking dish. 
- In a small bowl, mix together the olive oil and lemon juice. Drizzle the mixture over the chicken breasts. 
- Bake the chicken for 20-25 minutes, or until cooked through. 
- While the chicken is baking, prepare the chermoula sauce. In a food processor, combine the cilantro, parsley, mint, garlic, smoked paprika, cumin, coriander, and cayenne pepper. Pulse until the herbs are finely chopped. 
- Add the olive oil to the food processor and pulse until the sauce is well mixed. 
- Season the chermoula sauce with salt and pepper to taste. 
- Once the chicken is done, remove it from the oven and let it rest for a few minutes. 
- Spoon the chermoula sauce over the chicken breasts, and serve.
