chicken chermoula

 Chicken chermoula is a flavorful Moroccan dish made with a mixture of herbs and spices. Here's a simple recipe to make chicken chermoula:

Ingredients:

  • 4 boneless, skinless chicken breasts

  • 2 tablespoons of olive oil

  • 1 lemon, juiced

  • Salt and pepper to taste

For the chermoula sauce:

  • 1/2 cup of chopped fresh cilantro

  • 1/2 cup of chopped fresh parsley

  • 1/4 cup of chopped fresh mint

  • 2 garlic cloves, minced

  • 1 tablespoon of smoked paprika

  • 1 teaspoon of ground cumin

  • 1 teaspoon of ground coriander

  • 1/4 teaspoon of cayenne pepper

  • 1/4 cup of olive oil

  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).

  2. Season the chicken breasts with salt and pepper to taste, and place them in a baking dish.

  3. In a small bowl, mix together the olive oil and lemon juice. Drizzle the mixture over the chicken breasts.

  4. Bake the chicken for 20-25 minutes, or until cooked through.

  5. While the chicken is baking, prepare the chermoula sauce. In a food processor, combine the cilantro, parsley, mint, garlic, smoked paprika, cumin, coriander, and cayenne pepper. Pulse until the herbs are finely chopped.

  6. Add the olive oil to the food processor and pulse until the sauce is well mixed.

  7. Season the chermoula sauce with salt and pepper to taste.

  8. Once the chicken is done, remove it from the oven and let it rest for a few minutes.

  9. Spoon the chermoula sauce over the chicken breasts, and serve.
