Here is a recipe for freekeh soup:
ingredients:
1 cup Freekeh
2 tablespoons olive oil
1 large onion, chopped
3 garlic cloves, chopped
2 carrots, peeled and diced
2 sticks of celery, diced
6 cups vegetable or chicken broth
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon dried thyme
1/4 teaspoon cayenne pepper
salt and black pepper to taste
Fresh parsley to decorate
Instructions:
Rinse
Freekeh under cold running water and drain. Put aside.
In a large saucepan or Dutch Oven, heat olive oil over medium-high heat. Add onion and garlic and cook until onion is translucent, about 5 minutes.
Add
carrots and celery and cook an additional 5 minutes, stirring occasionally.
Put
Freekeh in the pot and mix with the vegetables.
Add
vegetable broth or chicken broth, cumin, coriander, thyme, and cayenne pepper to the saucepan. Stir to combine.
Increase the heat to high and bring the soup to a boil. Once simmering, reduce the heat to low and simmer for 30-40 minutes or until the freekeh is tender and the veggies are tender.
Season the soup with salt and black pepper.
Serve the soup hot, garnish with fresh parsley.
