My kids hate breakfast so I'm always trying to find new ways for them to take something with them. These muffins were delicious, filling, and healthier than other muffins you would buy prepackaged, and they loved them. You can also make this as a regular sliced bread or muffin, but I prefer the tops.
INGREDIENTS
2 cups whole wheat flour
1 teaspoon baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
½ cup brown sugar (I used organic)
2 apples (I used Cortland), cored, peeled and finely chopped
2 tablespoons 2% milk
½ cup applesauce
1 egg
¾ cup apple cider
¼ cup chopped walnuts
In a bowl, mix together the flour, baking soda, salt, cinnamon, and sugar.
In a separate bowl, combine apples, milk, applesauce, egg, and apple cider; mix well.
Add dry ingredients to wet ingredients and mix well. Then add the nuts. Pour batter into muffin cases and bake at 350 degrees for 20 minutes or until a toothpick inserted in the center comes out clean. Makes 12 muffin tops.
