limber de coco

 Limber de coco is a delicious Puerto Rican frozen treat that is similar to a coconut popsicle or ice cream. Here is a simple recipe to make it:

Ingredients:

  • 1 can (13.5 oz) of coconut milk

  • 1 can (14 oz) of sweetened condensed milk

  • 1 cup of water

  • 1/2 cup of shredded coconut

  • 1/4 tsp of salt

  • Popsicle molds or small cups and popsicle sticks

Instructions:

  1. In a blender, blend the coconut milk, sweetened condensed milk, water, shredded coconut, and salt until smooth.

  2. Pour the mixture into popsicle molds or small cups.

  3. If using cups, cover them with aluminum foil and poke a popsicle stick through the center of each foil.

  4. Freeze for at least 4 hours or until the limber is completely frozen.

  5. To serve, remove the limber from the mold or cup by dipping it in warm water for a few seconds.
