salty ice cream

 Here's a recipe for making salty ice cream:

Ingredients:

  • 2 cups heavy cream

  • 1 cup whole milk

  • 3/4 cup granulated sugar

  • 1/4 cup coarse sea salt

  • 4 large egg yolks

  • 1 teaspoon vanilla extract

  1. In a medium saucepan, heat the cream, milk, and 1/2 cup of sugar over medium heat. Stir occasionally until the sugar is dissolved and the mixture comes to a simmer.

  2. In a separate bowl, whisk the egg yolks and remaining 1/4 cup of sugar together until light and frothy.

  3. Slowly pour the hot cream mixture into the egg mixture, whisking constantly to prevent the eggs from scrambling.

  4. Pour the mixture back into the saucepan and cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon.

  5. Remove from heat and stir in the vanilla extract and sea salt until well combined.

  6. Pour the mixture into a container and let it cool to room temperature, then cover and refrigerate until completely chilled (at least 2 hours).

  7. Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.

  8. Serve immediately, or transfer the ice cream to an airtight container and freeze until firm.
